Similar to my post on spherification a few days back, here is another simple recipe to try. This one seems even easier and it involves alcohol. Two thumbs up!

This sounds like an awesome recipe to try. I’m still extremely interested in eating at a molecular gastronomy restaurant, but with the proper kitchen the recipe below would be worth a try. Spherification is a really interesting concept that takes some sort of liquid and converts it into jelly balls with a thing skin that pop open in your mouth, probably in a similar manner to ant eggs. My mind is already filling with ideas on how it could be used in some sort of high end Thai cuisine.

I saw this recipe and it really reminded me of a street food in Thailand called kanom bang naa gung [ขนมปังหน้าà¸à¸¸à¹‰à¸‡]. The main difference between this recipe and the Thai version (besides the use of shrimp compare to crab) is that after the “mayonnaise” is applied, the entire piece would then be deep-fried. Everyone loves a little extra oil crisp. I’m pretty sure Thai’s don’t use Sriracha sauce either, although in the end their seasonings are very similar. The recipe below looks ot be healthier and sound just as delicious.

I would like to clarify a few things here. First, I see no burger in this burger! Second, those are actually not maggots. They are bamboo worms and a fairly common snack (at least when talking about insects) in Thailand. I have posted about them many times previously, but they are very similar to crunchy little potato chips. Yep. And not nearly as disgusting as they look in this photo.

An interesting article on beer pairings with Pad Thai. I personally would just grab a Leo or Archa as they are the only Thai beers worth drinking in my opinion. There isn’t enough selection in Thailand to even think about how to pair your meals anyway. I’m envious when I walk into a supermarket in the U.S. and see 100’s of beers available and then think back to the pitiful selection in Thailand.
